Saga Prefecture takes pride in being the biggest producer of nori in Japan.
This distinction is due to the abundance of nature and highly skilled cultivators.
Saga Nori is grown in the Ariake Sea, where the difference between the ebb and flow of the tides reaches six meters. This, coupled with ample sunlight and inflows of freshwater from numerous rivers, is what gives nori its nutrients.
And Saga would not be number one without the dedicated nori growers who have developed cultivation techniques suited to the region over hundreds of years.
The pinnacle of Saga Nori is Ariakekai Ichiban.
After a strict inspection of everything from flavor and aroma to color and sheen, only three of every 10,000 nori sheets can be called Ariakekai Ichiban.
With its melt-in-your-mouth mouthfeel and superb aroma, no other seaweed can compare to Ariakekai Ichiban.

MUSTARD PASTA

The flavor of Saga Nori meets the spice of mustard in a plate of pasta.
This mildly salty sauce goes great with white wine.

(MAKES 2 SERVINGS)
2 SHEETS OF SAGA NORI
120g OF PASTA
A PINCH OF WATERCRESS
2 SLICES OF FINELY CHOPPED BACON
1 TBSP. OF OLIVE OIL
1 TSP. OF MUSTARD POWDER
1 TSP. OF SALT
200cc OF WATER
Directions
ADD THE WATER,SALT,OLIVE OIL AND BACON TO A POT AND HEAT.
AFTER THE MIXTURE COMES TO A BOIL,ADD THE PASTA AND COOK AT MEDIUM HEAT,OCCASIONALLY STIRRING.
ONCE THE PASTA HAS COOKED,ADD THE MUSTARD POWDER.MIX AND SERVE ON A PLATE.
SPRINKLE THE WATERCRESS AND GENEROUS PORTIONS OF SHREDDED SAGA NORI ON TOP OF THE PASTA.

60g OF UNSALTED ROASTED NUTS
Directions
BEND AND TEAR A SHEET OF SAGA NORI INTO FOURTHS.
PLACE THE SAGA NORI IN A RESEALABLE PLASTIC BAG AND TEAR IT INTO FINE SHREDS THROUGH THE BAG.
ADD THE NUTS AND SHAKE.
*ADD CUMIN,DRIED HERBS OR PEPPER TO TASTE.

Directions
CUT THE AVOCADO,CHEESE AND SMOKED SALMON INTO 3-5mm PIECES.
LAYER PIECES OF SAGA NORI IN BETWEEN EACH INGREDIENT AND LET SIT FOR 10 MINUTES.
CUT TO BITE SIZES AND TO SHOW THE ATTRACTIVE LAYERING.

Directions
CAREFULLY BEND AND TEAR SAGA NORI INTO PIECES THE SIZE OF THE MELBA TOAST.
ADD THE AVOCADO AND CHEESE, THEN SEASON WITH OLIVE OIL, ROCK SALT AND WHITE PEPPER.
